213. I’ve been procrastinating making this lovely drop of nectar of the gods … aka ‘Lemon Honey’; mainly cos I didn’t want to fuck up Nans recipe … but … BooYah! I did it! And I tell yah what .. I think Nan would be positively proud of my efforts cos its pretty dam close to what she used to make ;)

    • Its a whole lot of delicious goodness thats what it is LOL especially if you like the lemon taste … with a whole lot of sweetness ;) … made with ‘whole’ foods / products is best …

      Lemon Honey (Edmonds Cookery Book, 1998, p.226)
      4 lemons
      125g butter
      2 cups sugar
      4 eggs, beaten
      Grate only the yellow part of the lemon (avoid white part as it is bitter). Squeeze the lemons and strain the juice. Melt the butter in the top of a double boiler. Stir in sugar and lemon juice until sugar is dissolved. Add eggs and lemon rind. Place over boiling water and cook, stirring all the time until mixture thickens. Pour into sterilised jars. Store in the refrigerator. Makes about 4 x 250ml jars.
